Soup Carrot

Ingredients
1 Tbsp olive oil
1 onion, chopped
1 Tbsp chopped garlic
2 apples, peeled, cored,diced
4 carrots cut into ¼ inch pieces
1 quart water
1 tsp cumin
Himalayan salt, freshly ground black pepper
Chopped parsley, as garnish
Caution parsley may require quick
dip in boiling water ↓ oxalates

Preparation
Heat oil. Add onion and garlic and saute until softened, about 4 minutes. Add apple and carrots and saute for 2 minutes. Carefully add water and cumin. Bring to a boil, reduce heat to a simmer and cook until the apples and carrots are soft, about 15 to 20 minutes. Remove from the heat and puree in a blender. Season lightly with Himalayan salt and pepper. Garnish with parsley or cilantro and serve.
